Charleston, South Carolina working for Discovery Service Projects, we have lunch at Bertha's Kitchen. Rowland Carlson with his pink shirt and white hair glows like a bare lightbulb. Rowland marched with Martin Luther King in Selma, Alabama. Now he has projects around the world to help the working poor. Our meal consists of spare ribs, lima bean soup, turnip greens. Everything is cooked in fatback. To this day Connie and I can look down at our bellies and remember Charleston and southern cooking.
